I had some Guinness left in the fridge so last night I used it as my theme for this weekend’s Lab Cocktail. I think they’re perfectly suited for the weather we’ve been getting, so I hope you enjoy them. I did …

Black & Stormy (not to be confused with a “Dark & Stormy)

Ingredients
2 oz Diet Coke (0 cals)
1 oz. Kahlua (91 cals)
1 oz. Vodka (64 cals)
Guinness (about half the can, and only 63 cals! Assuming the typical 14.9oz can)

Total cals = 218

Instructions
Mix the vodka and kahlua in a pint glass. Add the splash of diet coke. Fill up the glass with extra-cold Guinness. Drink quickly, make another.

Mexican Opal

Ingredients
1 1/2 oz. Guinness (13 cals)
1 1/2 oz. Reposado Tequila (100 cals)
1 dash(es) Angostura Bitters
1/2 oz. Tawny Port (22 cals)
1/4 oz. Agave Nectar (15 cals)
1/4 oz. Water

Total cals = 150

Instructions
Shake all ingredients with ice and strain into a chilled low ball glass with or without ice. Garnish with some grated or ground cinnamon powder (optional). Drink quickly, make another.

(Guinness Note: I take a pint of Guinness before hand and use a bar spoon to stir it up for about 30 secs. This removes some of the Co2.)

Pork Chops with Beer-Mushroom Sauce

4 (1 1/2 inch thick) boneless pork center loin chops
2 Tablespoons flour
1 Tablespoons butter or margarine
4 ounces mushrooms, sliced
1/2 teaspoon thyme
8 ounces beer, room temperature

Melt butter in a large nonstick skillet over medium-high heat. Lightly flour chops and brown quickly on both sides. Remove, add mushrooms and thyme and saute 1 minute. Return chops to skillet, add beer and bring to boil. Cover and simmer for 12-15 minutes.

Makes 4 Servings
Serving Size: 1 pork chop
